Offering First-class Services for our Residents

At MorningStar of Fort Collins, our priority is to offer residents exceptional services.  Along with a broad range of wellness programs and activities, a salon, chapel/theatre, general store, bistro, fitness room and much more, we also offer our seniors three daily meals prepared by our own Executive Chef.   

In October 2015, we were pleased to welcome Chef Edward Gilbert to our community.  With a bachelor’s degree from the New England Culinary Institute, he has worked in the restaurant business for much of his career.  Brazilian-born, he spent his early years in Brazil, where he was raised eating fresh, local foods including mangos, fish, oranges, nuts and coffee.  Portuguese was his only language until his family immigrated to Nebraska when he was six-years old.  He attributes his background, which practiced farm-to-table food preparation as a way of life, for kindling his passion for food. 

What sets Chef Edward’s culinary skills apart from other senior living communities is that his meals not only evoke memories of his home but also offer an exceptional dining experience for our residents.  Under his direction, Chef Edward is developing true farm-to-table meals that do not rely on reheating food from cans or the freezer.  He also vigorously sources ingredients locally, seasonally and sustainably.
